This oxymel is made from the beach vitex extracted in persimmon vinegar, local honey, and with a touch of moshio salt.


The beach vitex, also known as 浜号 hamago, grows along the salty windswept shores of the ocean. It’s sage-like savory flavor is well held by the deep fruitiness of the vinegar, balanced with the sweetness of honey and moshio salt to bring it full circle back to the sea.


Ingredients
Persimmon vinegar, honey, beach vitex (Vitex rotundifolia.), moshio salt


Persimmon vinegar / 柿酢 kaki-su
Considered a health elixir for centuries in Asia. It is known to be high in minerals (potassium, selenium, magnesium), vitamins and antioxidants. This particular vinegar was made in a brewery in Wakayama pref. from 100% persimmons and aged for 2 years.


Honey
Harvested locally in Tottori pref.


Beach Vitex
A plant traditionally used in folk remedies for colds, headaches, congestion, inflammation, neuralgia, regulating menstrual cycles and easing cramping. The plant is known to have warming qualities.


Moshio salt / 藻塩 moshio
Sea salt made using a traditional technique, where sun-dried seaweed is soaked in seawater and boiled to extract the salt and seaweed flavor. Made locally in a fishing village here in Tottori pref.



What is an Oxymel?
Oxymel is a traditional herbal extraction process that uses oxy = acid + mel= honey.


*Note
Oxymels can be kept at room temperature for about 6 months, or longer if refrigerated.
