Bainiku Ekisu (Ume Plum Concentrate)

Bainiku ekisu is made from unripe 梅 ume plums (Prunus mume). Only the liquid is used and stirred over fire, slowly in a clay pot, for about 2 days. The result is a thick, dark and extremely sour, concentrated paste. It’s said to contain 10x more the citric acid than lemon juice and highly alkalinizing to the body.

Bainiku ekisu has been valued as a folk remedy for over a thousand years. Traditionally, it has been utilized as a digestive aid and catalyst for mineral absorption. It’s said to help relieve nausea, stomach issues, heat exhaustion, dehydration and general fatigue. It also has anti-bacterial and anti-fungal properties and known to be supportive to the immune system.


This is a highly precious remedy; it takes about 1kg of ume plums to produce 40g of medicinal paste.

The ume used in this batch came from a friend’s homestead and other organic sources from southern Japan. Each fruit was picked by the hands of the Nakagawa family, from grandparents to the little ones.

How to use
Dilute in water for a natural energy drink for hot weather. In Japan, women will turn to this paste for morning sickness. A classic way to take the paste is to mix a tiny dollop with a cup of warm water first thing in the morning for an alkaline tonic.

A bamboo mimi-kaki (ear pick) is sometimes used to measure very small quantities of medicine in Japan, there is one included with every jar!
