Bainiku ekisu is made from unripe 梅 ume plums (Prunus mume). Only the liquid is used and stirred over fire, slowly in a clay pot, for about 2 days. The result is a thick, dark and extremely tart, concentrated paste. It’s said to contain 10x more the citric acid than lemon juice and is highly alkalizing to the body.

Bainiku ekisu has been valued as a folk remedy for over a thousand years. Traditionally used to support digestion and aid in mineral absorption, it is also known to help ease nausea, soothe stomach discomfort, combat heat exhaustion and dehydration, and relieve general fatigue. It possesses natural anti bacterial and anti fungal properties and is supportive to the immune system. It is even said to help with H. pylori.

This is a highly precious remedy; it takes about 2kg of ume to produce 50g of medicinal paste.

The ume used in this batch were handpicked by us from a small organic grove near my home, with additional fruit sourced from organic growers in southern Japan.

How to use
A classic way to take the paste is to mix a tiny dollop with a cup of warm water first thing in the morning for an alkaline tonic, or anytime you need a little digestive support.

Dilute in water for a natural energy drink.
